Raw Blue Cheese

A complex, raw cow’s milk blue, made using traditional Stilton techniques but without the pasteurisation. Due to the raw milk used, the cheese is unable to be called Stilton. So instead, the cheese is named after a 12th century form of the name of the village – Stichelton!

Made by Joe Schneider in partnership with Randolph Hodgson of Neal’s Yard Dairy and the Welbeck Estate near Sherwood Forest, using the morning’s milk of their herd of Holstein cows.

Stichelton is immensely complex and rich with a soft and deliciously creamy texture.

Tŷ Caws recommends: Serve with a chilled sweet red wine, crumble onto salads or into soups and savoury tarts.
