Semi Hard Wash-rind Cheese

This unpasteurised cow’s milk cheese starts its life as a Caerphilly cheese but matures into something more powerful, spicy and aromatic. It’s washed by hand twice a week for 8 weeks, or until ready, in ‘Brevibacterium linens’ – bacteria which ferment and break down the rind.
We love the distinctive orange-pink washed-rind and the smoothness of Celtic Promise, which is made on @cawsteifi’s organic family farm in Ceredigion, where they’ve been making award-winning artisan cheeses since the 1980s.
