A traditional farmhouse Caerphilly with an edible mushroomy rind followed by a creamy breakdown layer leading into a crumbly delicate centre.
Gorwydd Caerphilly is made by the Trethowan brothers using their grandmother's recipe, and is named after their Welsh family farm where their cheesemaking began. They're one of only a handful of cheesemakers who still make this classic. It's handmade using reclaimed Victorian presses to press the cheeses into shape, which are then turned daily during their 2-3 month maturation.
